Coconut Lemon energy bites

Ingredients

  • 1 cup raw almonds
  • 1 cup raw walnuts
  • 1 cup pitted dates soaked for at least 10 minutes, and then chopped
  • 2 tablespoons lemon juice
  • ½ cup shredded coconut flakes unsweetened
  • ¼ teaspoon sea salt

Process

Grind the walnuts and almonds, preferably in a food processor until a dough starts to form.

Add the dates, lemon juice, ¼ cup shredded coconut flakes and salt and process until it starts to form a dough again.

Roll the mixture into round balls until all the mixture is finished. Roll the balls in the last ¼ cup shredded coconut flakes.

Place in the fridge for at least an hour and enjoy!
