It’s MANGO season and we’re not gonna leave you hanging!!
Ingredients
2 tbsp oil
1 tbsp mustard and cumin seeds
2 medium-sized onions, diced
5–6 garlic cloves
1tbsp turmeric, coriander and chili powder
2 mangoes, puréed
Salt to taste
1 cup Coconut Milk
200 gm tofu
1–2 green capsicum and other preferred veggies
Coriander leaves, for garnish
Process
Add oil, cumin and mustard seeds. Once mustard seeds start to splutter, add chopped green chilies. Add diced onions and garlic and sauté until it’s golden brown.
Meanwhile, peel fresh mangoes and add its slices and coconut milk in a blender to make a thick mango purée.
In the pan, add turmeric, coriander, red chili powder. Pour the mango coconut purée in the pan and stir.
In another pan, sear the tofu and cut into pieces. Next, add the tofu pieces, capsicum and close for 10mins.
Serve with rice.
