This weekend on thesol food, we have Veg Jambalaya. The colourful, one-pot dish has originated as a way of cooking a delicious and inexpensive meal with ingredients on hand for a big group. If you’re hosting a get together or are in the mood to experiment, don’t miss out on this popular recipe. 🤤
Ingredients
1/4 cup extra-virgin olive oil
1 onion sliced
2 medium carrots
1 medium red bell pepper
2 cups roasted tomatoes
3 to 4 cloves garlic minced
1 tsp paprika or cumin and chilli powder mix
Salt and black pepper
1 1/4 cups white rice
2 1/2 cups vegetable broth
1 cup red kidney beans
Hot pepper sauce
Process
Heat the oil in a large pan, add the onion, carrot and pepper, and stir occasionally for 5 mins.
Add the garlic, tomatoes, seasoning and salt. Simmer with lid for 25 minutes while stirring occasionally.
Add the beans and simmer for 3 mins. Stir in the remaining spices and rice, then tip in a can of water.
Bring to a simmer,cover and cook for 25 mins until the rice is tender and has absorbed most of the liquid.
You can use any spices, vegetables and legumes you like additionally.
