Are you ready to taste summer with a tinge of spice in a bowl?
Today on #thesolfood we have curd rice— a popular South Indian dish often labelled the best comfort food. And yes, it literally takes 10 minutes to prepare, given you have the ingredients handy.
Ingredients
2 cups cooked rice
2 1/2 cups fresh curd or yogurt
2 tbsp oil
2 tbsp white gram lentils
2 teaspoons a mustard seeds
3 green chillis
Asafoetida powder
Some curry leaves
Fresh Cilantro
Process
In a large bowl, combine the rice and 2 tbsp water and mash it lightly.
Add the curd and salt, mix well and keep aside.
Heat the oil in a small pan, add mustard seeds and white gram lentils. A minute later, add the curry leaves, asafoetida powder and sauté on medium flame for 30 seconds.
Add the tempering mix, green chilli and some coriander to the rice and combine well.
Serve the curd rice immediately or refrigerate for 1hr and serve chilled.
Note: You can also add some pomegranate or nuts for a distinct hint of sweetness.
