Ingredients
- 2 cucumbers
- 1 Red Onion
- ¼ tsp Crushed Red Pepper Flakes
- ½ cup Cilantro
- ½ cup crushed Peanuts
For the dressing
- 1 tbsp sesame oil
- 1 clove Garlic
- ½ cup Rice Vinegar
- 1 tbsp Sea salt and sugar
Process
- Chop the cucumber, cilantro, peanuts & onion and keep aside.
- Prep the dressing by whisking garlic, sesame oil, rice vinegar, salt & sugar together.
- Combine the cucumbers, onion, chilli flakes, cilantro, mint (optional) and peanuts in a large bowl. Drizzle evenly with the dressing and toss until combined.
- Top it with anything you like and you can serve it cold, too.
