Asian Cucumber Salad

Ingredients 

  • 2 cucumbers
  • 1 Red Onion
  • ¼ tsp Crushed Red Pepper Flakes
  • ½  cup Cilantro
  • ½  cup crushed Peanuts

For the dressing 

  • 1 tbsp sesame oil
  • 1 clove Garlic
  • ½ cup Rice Vinegar
  • 1 tbsp Sea salt and sugar

 

Process 

  • Chop the cucumber, cilantro, peanuts & onion and keep aside.
  • Prep the dressing by whisking garlic, sesame oil, rice vinegar, salt & sugar together.
  • Combine the cucumbers, onion, chilli flakes, cilantro, mint (optional) and peanuts in a large bowl.  Drizzle evenly with the dressing and toss until combined.
  • Top it with anything you like and you can serve it cold, too.
