Garlic lentil soup

It’s a new day, it’s a new recipe. And one the doesn’t take hours and serves as great comfort food. 🧄🥕🥬

Ingredients

1 chopped onion
2 cloves garlic (pressed)
200g carrots
250g lentils
4 cups vegetable broth
400g coconut milk
1tbsp corn starch
Spinach
Black pepper and salt

Process

Heat oil in a large pot, add onion and garlic, cook until soft. Add the carrots and cook for 2 minutes.

Add the broth, coconut milk, corn starch, and lentils. Simmer for 15-20 minutes.

Once thickened, add spinach, salt, pepper, and enjoy!
