Mushroom-Spinach Sandwich

Have some leftover veggies in the fridge? Just make a sandwich, then. Today on #thesolfood we have Mushroom spinach sandwich which is yum, takes 10 minutes to make and puts the leftovers to good use.

Ingredients

1tbsp butter

2 cloves garlic

1 cup mushroom

1 teaspoon soy sauce

1 cup spinach

1/2 cup mozzarella cheese (optional)

Red chilli flakes

2 slices of preferred bread

Process

Melt the butter, add the finely chopped garlic, soy sauce and mushroom in the same order on medium flame.

Then add the spinach and sauté until the leaves are wilted. Turn off the heat and add cheese, chilli flakes, salt and pepper to taste.

Top two slices of bread with the mushroom-spinach mix and place in a toaster. Toast for about 4-8 minutes and viola, lunch is served.
